As all hotels and resorts vary, it is important to check in advance with your accommodation provider. Besides a good meal, the Uluru-Kata Tjuta National Park is open year round with December hours running from 5am to 9pm in order to allow visitors the chance to view sunrise or sunset over the monolith that is Ayers Rock.
